TRAINING

Training for pizza makers who want to understand the process—not just memorize one. Whether you’re a serious home pizzamaker, an experienced professional, or somewhere in between, the goal is to build the knowledge, recognition and intuition to make better decisions on your own.

HOW I TEACH

I simplify the technical side of pizza by connecting the science to what you can actually see, feel, smell and hear. Instead of asking you to memorize a rigid process, I help you recognize the indicators, understand what they mean, and learn how to respond.

Learn to read the dough—not just follow the recipe.

LEARN → UNDERSTAND → MASTER → DEVELOP

Four round pizzas topped with mixed vegetables, cheese and herbs, pepperoni, mushrooms, and assorted meat.

We build from the fundamentals, connect the science to what you see and feel in the dough, and turn that understanding into the confidence to adjust your process, solve problems, and develop pizza that’s your own.

  • LEARN

Build the foundation. Understand the basic ingredients, percentages, mixing, fermentation and baking process so you know what’s actually happening—not just what step comes next.

  • UNDERSTAND

Connect the technique to the science behind it. Learn how flour, hydration, temperature, fermentation and mixing affect the dough—and how to recognize those changes through sight, touch, smell, sound and behavior.

  • MASTER

Develop consistency, control and intuition. Learn to recognize when the dough is ready, how to adjust when conditions change, and how to troubleshoot problems without relying on a rigid recipe.

  • DEVELOP

Take what you’ve learned and make it your own. Build and refine formulas, troubleshoot systems, develop new pizza styles, and create processes that are repeatable for you—or an entire team.

WHO THIS TRAINING IS FOR

This training is built for people who are serious about improving their pizza—whether you’re making dough at home, working professionally, or pushing into a deeper technical level. The starting point may be different, but the goal is the same: better understanding, better decisions and better pizza.

  • THE ADVANCED PIZZA MAKER

You already understand the fundamentals and want to push deeper into flour behavior, fermentation, dough temperature, preferments, mixing, crumb structure, baking and formula development. The focus shifts from following technique to understanding the relationships between variables and making informed adjustments with confidence.

  • THE SERIOUS HOME PIZZAMAKER

You’ve moved beyond simply following recipes and want to understand why your dough behaves the way it does. We focus on the fundamentals, the sensory indicators and the technical details that help you become more consistent, more confident and more independent as a pizzamaker.

TRAINING OPTIONS

Training can be tailored to the person, the team and the level of depth you need. The goal is never to force everyone through the same program—it’s to meet you where you are and build from there.

  • ONE-ON-ONE TRAINING

Focused, personalized training built around your current level, your pizza style and the problems you want to solve. We can work on fundamentals, dough handling, fermentation, sensory indicators, troubleshooting, formula development or a deeper technical curriculum.

  • SMALL-GROUP TRAINING

Hands-on training for small groups who want a more focused, interactive learning experience. The format allows us to work through technique, dough behavior, fermentation, troubleshooting and sensory indicators in a way that keeps everyone involved and learning by doing.

  • PROFESSIONAL & TEAM TRAINING

Hands-on training for working pizzamakers, chefs and restaurant teams focused on consistency, technique and understanding the process. The goal is to build a system your staff can recognize, repeat and troubleshoot—not just a list of instructions they have to memorize.
